Ingredients

  • 3 tablespoons of oil
  • 1/2 cup white onion chopped (60 g)
  • 2 cloves of garlic crushed
  • 1 cup grated carrot 100 g
  • 1/2 cup yellow bell pepper chopped (60 g)
  • 4 cups ground chicken breast 450 g
  • 1/2 cup breadcrumbs 60 g
  • 1 teaspoon dried oregano
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 cup ketchup 125 g

Instructions

  • Preheat your oven to 350°F (180°C) and grease an oven-safe loaf pan.
  • Pour 1 tablespoon of oil into a hot skillet and sauté the onions and crushed garlic. Cook for about 5 minutes until the onions become translucent. Immediately add the grated carrot and bell pepper, continue cooking for 5 more minutes, and then turn off the heat.
  • In a large bowl, combine the ground chicken, breadcrumbs, sautéed vegetables, oregano, salt, pepper, and Worcestershire sauce.
  • Mix all the ingredients thoroughly until you have a homogeneous mixture.
  • Place the mixture into the greased loaf pan and press it down firmly to compact it. Mix the ketchup with the remaining 2 tablespoons of oil and brush it over the top of the meatloaf. Cover with aluminum foil.
