Sauté the onion: In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until soft, about 5 minutes.
Mix the ingredients: In a large bowl, combine the ground chicken, sautéed onion, salt, pepper, cumin, and paprika. Add the breadcrumbs and mix until all the ingredients are well incorporated.
Form the patties: Divide the mixture into six equal portions and shape them into patties about 7 cm (2.75 inches) in diameter.
